What is a Pupusa?

A pupusa is a handmade Salvadoran corn cake, griddled until crisp on the outside and filled with melty cheese, slow-cooked meats, or beans.

Think somewhere between a grilled cheese and a thick corn tortilla - served hot and traditionally eaten with curtido (a bright cabbage slaw) and salsa roja.
